This unpasteurised cow’s milk cheese is produced in the winter months only. Mont d’Or is shaped by circling it with spruce bark.
Often eaten hot fondue-style, it has a lot of character when ripe as it becomes runny and full of flavour; but also delicious cold on a cheese platter served with a spoon!
